2 cups coconut cream
3 eggs + 1 egg yolk
3 tablespoons maple syrup
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1 level tablespoon gelatin
100g dark chocolate, chopped roughly
Blend together the coconut cream, eggs and egg yolk, maple syrup, cinnamon and vanilla extract until smooth.
Place in a saucepan on low, stirring continuously until it thickens and coats the back of the spoon.
Place back into blender with the gelatin and blend on high for 5 seconds to combine.
Add chopped dark chocolate and let it melt into the hot mixture.
Pulse a couple of times once melted to combine and pour into little pots or ramekins
Refrigerate for an hour to set.
You can top the puddings with any topping of your choice (fresh berries are nice) or enjoy them on their own.
