Gingerbread Cookies Recipe!

It isn’t Christmas without delicious gingerbread cookies! This recipe is both fun and easy to make. The whole family will love them!


  • 1.5 cups rolled oats
  • ¼ tsp. bicarb soda
  • ¼ cup butter, melted
  • 2 tbsp. milk
  • ¼ cup maple syrup
  • ½ tsp of each of the following ground spices: cinnamon, ginger, mixed spice, nutmeg


  • Preheat your oven to 150ᵒC and line a flat tray with baking paper. In a blender, whiz up the oats until they form a fine flour
  • Add the butter, milk and maple syrup to a blender or food processor and mix until well combined. In a bowl, whisk the flour, spices and bicarb together
  • Using a spatula, gently mix the wet ingredients with the dry ingredients until a dough forms
  • Roll the dough into a ball and refrigerate for 30 mins
  • Once refrigerated, roll out the dough on a clean surface to about 3mm in thickness and then cut using a cookie cutter
  • Place your cookies on the prepared tray and bake for 10 mins or until golden
