About the Easiyo yogurt cultures
What cultures are contained in Easiyo yogurt? How do the cultures stay viable in the sachets? What are the benefits of consuming lactic cultures? How do I ensure I’m consuming live cultures? How long do the beneficial cultures last in made-up Easiyo yogurt?
Why should I make my own yogurt? Store bought yogurts can be loaded with preservatives, artificial flavours and excessive amounts of sweeteners. Easiyo is not only the freshest yogurt you can get, with more beneficial live cultures in every spoonful (probiotic cultures that you need for your digestive and immune health), it contains no artificial ingredients and more calcium than store bought yogurt. Read our blog article Great Reasons to Make Your Own Yoghurt.
Why is Easiyo yogurt so good for you? The fresher the yogurt the higher the population of live lactic cultures. Lactic bacteria (cultures) occur naturally in the intestines to aid digestion and fight bad bacteria. By eating fresh Easiyo yogurt daily you can help replenish and maintain the natural balance of these important lactic cultures in your body, thus helping to reduce the disease and gas producing bacteria within the intestine.
Can my baby eat Easiyo yogurt? As long as your baby can eat solids then he/she can eat any of the Easiyo yogurts. The cultures in Easiyo break down the nutrients into more absorbable forms so yogurt is the ideal food for babies. In fact, it will help keep his/her tummy healthy and happy with its abundance of beneficial live lactic cultures. These help keep the digestive system clean and healthy and aid in the digestion of other foods.
Can I eat Easiyo yogurt when I’m pregnant? Yes of course Easiyo yogurt is especially good for pregnant women because it is high in calcium, protein, vitamins and minerals plus contains folic acid which is known for its role in nervous system development.
- Changes in the tap water temperature
- Small changes in the milk powder between seasons
- The length of time that your yogurt is left to set
- The temperature of your room – yogurt will set differently in the summer and winter – and you may have to make some small adjustments to compensate for this.
What should I do if my yogurt hasn’t set? Don’t top up with more boiling water – you might upset the fermentation balance. Hopefully if you leave your yogurt another couple of hours it will set. You can let your yogurt ferment for up to 12 hours if necessary. Here are some tips to try with your next batch if your yogurt hasn’t set for any reason:
- The water in the jar needs to be cold (around 15-20 degrees), not freezing, warm or hot. If your tap water is very cold (e.g. in winter or if from the fridge) you may need to add a little warm water or warm the water slightly)
- You should fill the jar to the brim with cold water after the initial mix and have shaken all the powder in so it is mixed well.
- If you like thicker yogurt, try adding part of another sachet. Do not use less water in the jar as the mix could get too hot and kill off the cultures.
- Ensure your disk baffle is pushed down as far as it can go and does not rise up when boiling water is added.
- Ensure you have put the jar into the yogurt maker after you have poured the boiling water in – to the correct line. More or less boiling water might cause you problems with setting.
- Make sure you haven’t added any fruit squirts, fruit pieces or honey until after the yogurt has set (it can unbalance the pH)
Can I use milk to make my own yoghurt? We would suggest that you don’t… the Easiyo system is designed to eliminate the dangers of incubating milk and and the base powder is heat treated to eliminate unwanted microorganisms.
Can I buy yogurt and use this as a base? Again, this is possible but we would suggest you don’t – using bought yogurt as a base is an expensive and unreliable method of making yogurt at home and will not ensure you of all the lactic cultures present in Easiyo yogurt. It is likely that only one yogurt strain will come through (l.bifidus) and l. Acidophilus will almost certainly be lost – which will reduce the benefits of the yogurt on your intestine and immune system.
How can I sweeten my yogurt? You can add your desired amount of sugar (caster, icing or brown) or sweetener while making, or once it is made, add some Easiyo real fruit squirt topping or melted honey.
Can I add fruit and if so, when? Yes you can choose to use an Easiyo fruit squirt when the yogurt is made and chilled. These are specially designed to add sufficient flavour to the yogurt. Alternatively you can add whatever fruit you would like to put with your Easiyo yogurt. Fresh or stewed fruit is great, again add this after the yogurt is made. Don’t add fruit or topping during making/setting.
Why does my yogurt separate into solid and whey? Whey being expressed from the yogurt is part of a natural process. Commercial yogurts contain thickeners or stabilisers to absorb the whey expressed, but as Easiyo contains no such additives the whey is best mixed back into the yogurt as it is full of b vitamins and very nutritious. Alternatively, you may can strain the whey and make use of it in your cooking. There is no loss of the culture content in the whey.
Can I use a sachet after its best before date? If your yogurt sets – it is ok to eat. The date on the packet it a suggested best before date only, not a use by. If it makes yogurt then it has produced lactic acid which bad bugs can’t live in.
What is in the yogurt sachets? Easiyo yogurt sachets consist of the highest quality New Zealand milk powder and lactic cultures. They do not contain stabilizers, emulsifiers, artificial colouring or preservatives. All the flavours are natural or nature identical (meaning they are derived from the plant or fruit they are named after, or from other vegetable or fruit with similar elements). You just add clean drinking water.
How natural are the contents of my Easiyo sachet? Easiyo Yogurt sachets contain no artificial flavours, colouring, no stabilizers, emulsifiers or preservatives! The flavours are all nature identical ie from a natural vegetable source but not necessarily from the flavour named. ie citric acid could be obtained from various sources. NONE of our flavours are artificial - they are all derived from naturally occurring compounds.
Why do you use Soy Lecithin? Soy Lecithin is used in very small amounts in many powdered products to make them dissolve easily. In Easiyo it is used to instantise the milk powder i.e. keep the milk protein from lumping. The soya lecithin is in the whole milk varieties. It is typically not in the skim milk versions but there may be small traces so we to state it just in case.
Are Easiyo yogurts low GI? Not all carbohydrate foods are created equal, in fact they behave quite differently in our bodies. The glycemic index or gi describes this difference by ranking carbohydrates according to their effect on our blood glucose levels. All the Easiyo yogurts are less than 18 on the gi scale with the sweetened flavours less than 32. These numbers are both considered low by the foster-powel and brand millar test method for determining the glycemic index.
Can I eat Easiyo if I’m allergic to cow’s milk? Lactose intolerant is different to being allergic to milk (cow’s) protein. If you are lactose intolerant, then you should be able to have yogurt, as almost all of the lactose has been converted into two simple sugars that almost everyone can tolerate. If however you are protein allergic, then you definitely will have to convert to a non dairy milk base. You can source a non dairy starter from the chiller (soy) and use this to inoculate your goat, sheep, soya milk (boil first if it is not uht already, then cool to 45ºc before adding culture) Easiyo are working working on a non dairy yogurt so watch this space!
What cultures are contained in Easiyo yogurt? All Easiyo yogurts contain lactic bulgaricus, s.thermophilus and lactic acidophilus (great for the intestine). The combination gives Easiyo it’s wonderful taste and texture.
How do the cultures stay viable in the sachets? The cultures are freeze dried which means all the moisture is extracted and the cultures can hibernate for up to two years without losing their viability. The cultures activate when in the presence of water and the correct temperature. The Easiyo yogurt maker provides this correct temperature!
What are the benefits of consuming lactic cultures? The l.bulgaricus culture is there to help the fermentation process. But the other two cultures are probiotic. This means they have the ability to survive the stomach juices and do beneficial deeds in the stomach and intestine. They have many functions: they create lactic acid which bad bugs can’t survive in; they line the gut walls and stop pathogens getting through into the body, they speed up the removal of waste; they repopulate the gut after illness or some antibiotics, they aid in the uptake of nutrients, to name just a few. All the Easiyo cultures are human compatible in that they do the function they are designed for in the human gut. Easiyo cultures have been thoroughly tested for functionality.
How do I ensure I’m consuming live cultures? The very fact that you make your yogurt fresh with Easiyo guarantees the most live cultures you can get (this includes acidophilus). Store bought yogurt may not even have many live cultures left in it once it is finally consumed. This is because cultures have a limited lifetime. So you need to eat your yogurt freshly-made. By law, yogurt must contain millions of live cultures per spoonful (at the time of manufacture). A spoonful of Easiyo yogurt contains billions.
How long do the beneficial cultures last in made-up Easiyo yogurt? Once activated (when you use the sachet to make up the yogurt), it is the freshest yogurt you can get because you have just made it! Just 1 gram of freshly-made Easiyo yogurt after 6 hours in the making process contains around 1 billion live cultures! Easiyo did extensive research on their cultures to make sure they survive in plentiful numbers for the duration of their made up shelf life ie the two weeks indicated on the instructions. That includes all the probiotic cultures put in the sachets as well. “all our tests on our yogurts indicate there are millions of live cultures still present in every spoonful after these two weeks!”
This is more than can be said about many store bought yogurts at the end of their shelf life! As these cultures are living organisms, the numbers do fluctuate depending on such things as outside temperatures, water temperature etc, but you are always guaranteed “real” yogurt. ie. Easiyo yogurt always contains cultures in sufficient numbers for the consumer to reap thebenefits that only live cultures deliver.
